Beaver is the exact halfway point between Las Vegas and Provo. This works out perfectly for us since it also just happens to be home to an amazing creamery, The Creamery. It is a popular spot (any day of the week, in all types of weather) so we decided to just wait in one line, the ice cream line, and forwent getting food. (It was the only choice.) Instead, we just grabbed a bag of precut mixed cheeses and a box of bite sized crackers. After getting our ice cream we headed to a nearby park in downtown. The downtown area doesn’t have much to offer but a series of Mormon built buildings made of beautifully arranged bricks.
Beaver was founded by Mormons in 1856. Ann Gillies, born in Britain to parents who converted to Mormonism, moved to Beaver in 1859 where she married Maximilian Parker (also born in Britain to Mormon converts). Their first born child, here in the small town of Beaver, was the most notorious outlaw of the American West, Butch Cassidy. His family moved to Circleville, Utah, when he was 11, and it was there that his criminal activity began. The town of Beaver was spared.
